Black Bean Soup

I love homemade soup in the winter and with the high today of 8 degrees, I made soup last night for lunch today. I didn't take a picture, but here's the recipe:

1 med onion
2 red bell peppers
2 tomatoes
1 T minced garlic
2 T olive oil
1 1/2 tsp. oregano
1 jalapeno
3 cans black beans, drained and rinsed
2 T chopped cilantro
6 c stock
salt and pepper

Heat oil in large pot and chop all veggies. Saute onion, bell pepper, garlic, tomato, jalapeno, and oregano until onions are translucent. Add stock and black beans, bring to simmer. Simmer 10 min, add cilantro. Using a stick blender, coarsely blend soup. Season with salt and pepper as needed. Serve with fat free sour cream and a few sprigs of cilantro. With all the protein and fiber in this, you can't go wrong!
